We enjoy the holidays more knowing we are making choices that not only taste good, but are bar none nutrition for the body – so we don’t have to pay for our choices the day after with extra trips to the gym or potential sickness down the road. Inside the You & Improved Coaching Kitchen | Our Own Thanksgiving Whole Grain Homemade Pie Crust:

- 3 cups buckwheat
- 2 cups rolled oats
Run grains twice through clean coffee grinder on fine setting.
- 2 cups sifted flour
- 1 tsp raw sea salt
- 3/8 cups unrefined coconut oil (room temperature so it’s solid)
- 3/8 cup organic butter
- 5-6 Tbsp cold water
In a medium bowl, lightly stir together four & salt with a fork.
With Pastry Blender or knives, cut in oil and butter until mixture resembles coarse crumbles.
sprinkle in cold water a tablespoon at a time, mixing lightly with a fork until pastry holds together.
With hands, shape pastry into a ball, wrap with waxed paper and refrigerate for 30 minutes.
For a two crust pie, divide pastry into 2 pieces and shape each into a ball.
lay a large piece of suran wrap or wax paper on a flat surface. Lightly floured suran wrap or paper, with a rolling pin, roll ball into a 1/8 inch thick circle, 2 inches larger all around than the pie dish.
Lift saran wrap and turn upside down into pie dish. Fill as recipe directs.
